
Spaghetti squash is my new addiction. So easy to make! Cut in half, place the halves upside-down on a sheet, bake for about an hour, and enjoy. Gently fork and fluff the squash, drizzle with evoo, and sprinkle with fresh, shredded parmesan cheese or crumbled feta. Garnish with broccoli rabe or fresh tomatoes. Warming, filling, and comforting, this is a lovely dish for those who do not like the taste of squash. Spaghetti squash has a nearly non-squashy flavor. Plus, it's fun to eat!
You may also top with tomato sauce. Treat it just as you would regular spaghetti!
