I've never made fudge before. This may or may not have been a good idea.
All three batches are cooling in the fridge...recipe to follow if they turn out ok.
Edited to add: white chocolate peppermint fudge
5 cups white sugar
1 big container Fluff - I think it is 17oz
1 stick butter
1 teaspoon salt
24oz white chocolate chips
1 tablespoon vanilla
2+ tablespoons peppermint extract
Red food coloring
Candy canes/peppermint candies
Wax paper
Crush the candy canes and set aside. Over low heat, combine and constantly stir sugar, Fluff, and butter until the soft ball stage. Turn off heat and stir in salt, chocolate chips, vanilla and peppermint extract. If you want the batch to be totally pink or red, also add the food coloring. When the chips are totally melted and blended, carefully pour into a wax paper-lined tray. Dot the top of fudge with food coloring and gently - with a fork and using a curlique pattern - swirl the top. Top with crushed candy canes and every-so-gently pat into fudge. Let cool for several hours and then cut.
