"Would you like some sweet potato?" she asked on Saturday night, when sweet potatoes, Triscuits, and assorted condiments were the only foodstuffs in her house. "Yeesh. Bleeech. I hate sweet potatoes," I replied. "So I should only make enough for me despite the fact that I can hear your belly from here...is that what you're saying?" I stuck my tongue out and prepared another finger sandwich of Triscuit topped with a salad of chopped water chestnut and Dijon.
About an hour later, Friend requested I sample her creations. I declined. She threatened to kick me out of her house, which was technically possible as we had, by then, managed to get the front door to swing open.
Oh my goodness gracious, these were so good. And they were good even when I wasn't so hungry. I know because I was preparing another five batches even before the first was consumed.
Sweet potato fries, basic
Slice sweet potato into very thin slices. Soak in cold water for at least 30 minutes; this will remove some of the excess starch that makes sweet potato fries mushier than white potatoes. Dry. Brush with olive oil and bake at 375-400, turning several times. Drain on paper towels. Sprinkle with salt.
SWEET potato fries
My favorite
Bake plain. After draining, top with hot sauce and fresh cilantro. While it is true that I'd pronouce just about anything topped with hot sauce as The Best Thing, Ever, the heat and cilantro do something wonderful with the sweetness and make...The Best Thing, Ever.

I love sweet potato fries. Have never tried them with hot sauce and cilantro though. Two of my favorite things.
You should also try them with cumin. To die for.
